Banana Muffins
Ingredients :
250g plain flour
4t baking powder
1/2 t cream of tartar
pinch of salt
110g caster sugar
3 overriped bananas
2 large eggs
1-1/2 t vanilla essence
75g butter, melted n cooledWalnut bits
Method:
- In a bowl, add flour, baking powder, salt, cream of tartar and sugar. Mix well.
- Mashed all the bananas and set aside.
- In another bowl, add eggs, vanilla essence, butter and milk. Lightly beat the mixture well with just a fork.
- Add the mashed banana into the egg mixture and combine well.
- Pour egg mixture into the dry mixture and combine using fold-in method - take care not to over-do it.
- The resulting mixture should be lumpy n thick.
- Pour into moulds, each mould should be almost full.
- Top with walnut bits (I forgot to add mine in the pic)
- Bake for 25 mins @ 375F.
- Cool 10 mins on rack before serving.
The muffins are nice, really soft.
