Banana Muffins


Banana Muffins
Ingredients :
250g plain flour
4t baking powder
1/2 t cream of tartar
pinch of salt
110g caster sugar
3 overriped bananas
2 large eggs
1-1/2 t vanilla essence
75g butter, melted n cooled
125ml milk
Walnut bits


Method:
  1. In a bowl, add flour, baking powder, salt, cream of tartar and sugar. Mix well.
  2. Mashed all the bananas and set aside.
  3. In another bowl, add eggs, vanilla essence, butter and milk. Lightly beat the mixture well with just a fork.
  4. Add the mashed banana into the egg mixture and combine well.
  5. Pour egg mixture into the dry mixture and combine using fold-in method - take care not to over-do it.
  6. The resulting mixture should be lumpy n thick.
  7. Pour into moulds, each mould should be almost full.
  8. Top with walnut bits (I forgot to add mine in the pic)
  9. Bake for 25 mins @ 375F.
  10. Cool 10 mins on rack before serving.

The muffins are nice, really soft.
