三杯鸡

三杯鸡 (Three cups chicken)


Ingredients:
1 chicken (I bought no growth hormone added type)
10 slices ginger
15 cloves garlic
2 red chilli (cut into big pieces)
2 stalks green onions (cut into 2 inch pieces)
2 stalk basil

Seasonings:
1/4 cup sesame oil
¼ cup light soy sauce
1/4 cup Chinese cooking wine
2 tsp sugar
3 cinnamon stick
pepper
chilli powder (I used Cayenne Pepper)
1/4 tsp five spice powder
1 tbsp ketchup
1 tbsp black vinegar
1 tbsp dark soy sauce

Methods:
1. Clean chicken well and cut up into smaller pieces.
2. In a claypot/corning ware, put the ginger, garlic, chilli, green onions at the bottom.
3. Place the chicken pieces on top the ingredients.
4. Add all the seasonings.
4. Use high heat to cook the chicken uncovered for about 15 mins.
5. Add in basil, cover and continue to cook until the sauce thickens to your liking.
