3 bananas (very ripe)
3/4 cup plain flour
1 tsp baking powder
2 tbsp light brown sugar
2 tbsp sugar (if the banana is not sweet)
pinch of salt
Method:
- Mash the bananas. Mix in the flour, baking powder, salt and brown sugar.
- Taste the mixture, if not sweet enough, add the sugar.
- Mix well. The mixture might be a little runny.
- Heat oil. Use a tablespoon to drop dollops of the mixture into the hot oil.
- When the fritters turn brown, spoon up on kitchen towel to drain excess oil.
- If you want it even sweeter, you might sprinkle powdered sugar on it sparingly.
