Banana Fritters

Ingredients:
3 bananas (very ripe)
3/4 cup plain flour
1 tsp baking powder
2 tbsp light brown sugar
2 tbsp sugar (if the banana is not sweet)
pinch of salt
Method:
  1. Mash the bananas. Mix in the flour, baking powder, salt and brown sugar.
  2. Taste the mixture, if not sweet enough, add the sugar.
  3. Mix well. The mixture might be a little runny.
  4. Heat oil. Use a tablespoon to drop dollops of the mixture into the hot oil.
  5. When the fritters turn brown, spoon up on kitchen towel to drain excess oil.
  6. If you want it even sweeter, you might sprinkle powdered sugar on it sparingly.
